Walking into a night market alone usually goes the same way. You do not know what is good, the menus are in Vietnamese, prices come only if you ask, and you end up eating at whichever stall caught your eye.
This tour spends those three hours differently. Your guide picks only the stalls she actually eats at, and you sit down six times. Prawns and squid straight off the charcoal, rice paper grilled to order, lemongrass skewers still smoking, and a cold bowl of chè to finish.
Ordering, paying and spice levels are all handled for you in Thai. Most stalls take cash only, but you will never open your wallet. Your job is to sit, eat, and ask what things are.
When you have had enough, we walk together to the Dragon Bridge. Nine o'clock, fire. (Fri–Sun. On other nights we finish with the riverside promenade instead.)
