Every plate arrives with a story — how long that ferment sat, which field the herbs came from that morning, why this combination sits in the memory of people from this coast. All of it is told in English.
So we take the course in advance and write the plate-by-plate notes in Thai for you. Sit down with that page in hand and the chef's story lines up with what is in front of you from the first course.
Nén opened in 2017 as modern Vietnamese fine dining. It recomposes seasonal Central Vietnamese ingredients and traditional fermenting into a course, and holds a MICHELIN Green Star for its own growing and its sourcing. Few seats and reservation-only, which makes it awkward to slot into a trip — we handle the table.
The meal runs two and a half to three hours. Plan it as the way you close a day in Da Nang.
