Phở, bún chả and chả cá all started here — eat them where they began

Hanoi food is gentler than Da Nang's and less sweet than Saigon's. What it works with instead is broth and fermentation. This is the north, where the seasons are real and winter is genuinely cold, and a city that answers that cold by opening the day with a bowl of hot soup.

Most of the dishes Vietnam is known for started here: phở and its clear beef broth, bún chả with charcoal-grilled pork dropped into a sweet-sour dipping broth, chả cá finished with dill in a pan on your own table, bánh cuốn rolled from rice sheets steamed paper-thin. When a dish is described as "Hanoi-style", it usually means the original is here.

The 2026 MICHELIN Guide put 23 of Hanoi's small local shops on its Bib Gourmand list. Five of the seven below are on it; the other two we chose because Hanoi families have gone to them for generations. Most will feed you properly for 40,000–70,000₫ — about 50 to 90 baht (1 THB ≈ 800₫, Aug 2026).

Queue, pay first, carry your own bowl

By six in the morning there is a queue outside number 49 Bát Đàn. Clear broth simmered from beef bones alone, flat rice noodles, thin slices of beef laid on top. No side plate of bean sprouts or basil the way the south serves it — Hanoi phở carries only spring onion and coriander and lets the broth do the work. This place is self-service: say your cut at the end of the queue, pay cash first, then carry your own bowl to whatever seat is free. Half a spoon of the garlic vinegar on the table, and squeeze the lime last — put it in at the start and the broth loses its edge.

The table Obama sat at is still there, under glass

Bún chả belongs to Hanoi. Charcoal-grilled pork belly and minced-pork patties arrive floating in a sweet-sour broth, and you drop the rice vermicelli and herbs into it yourself. In 2016 President Obama and the cook Anthony Bourdain sat facing each other on the second floor over bún chả and a bottle of Hanoi beer, and that table, those two stools and the bottle have been kept under a glass case ever since. The same order is still on the menu as the Combo Obama: one bowl of bún chả, one crab spring roll, one Hanoi beer. The broth comes lukewarm — this is not a hot noodle soup, so don't ask them to heat it.

Before you goThe preserved table is on the second floor — you will miss it if you sit downstairs, so go up first if you want the photo. Between noon and one you may wait around twenty minutes. The lukewarm broth is correct; dip the noodles and herbs into it a little at a time.

The moment a fistful of dill wilts in the pan in front of you

Chả cá is catfish (cá lăng) marinated in turmeric and galangal, part-grilled over charcoal, then finished in a pan on your own table under a fistful of dill and spring onion. You will rarely find it outside Hanoi. Don't rush it — wait until the dill has wilted and the edges have gone brown, then build the bowl: rice vermicelli first, fish and dill on top, roasted peanuts scattered over, and half a spoon of the fermented shrimp sauce (mắm tôm). If that smell is too much, ask for the fish sauce instead. Number 6B, through the courtyard of a century-old yellow townhouse, is the original.

Before you goIt is ordered per person, so two of you means two portions. The fermented shrimp sauce is pungent — try half a spoon first and swap to fish sauce if it isn't for you. Several similar names share the street, so check that you are at number 6B, the one with the courtyard entrance.

Fourth generation, lifting each rice sheet by hand

They have made nothing but bánh cuốn at this address since 1973. Soaked rice is ground into a batter, spread paper-thin over a cloth-covered steamer, filled with minced pork and wood-ear mushroom, then lifted off one sheet at a time with a bamboo stick and rolled. The sheet is so thin that skill shows immediately, and this family is on its fourth generation of it — the 2026 MICHELIN Guide gave them a Bib Gourmand. Dip the rolls together with the fried shallots and a slice of giò lụa, the pale Vietnamese pork sausage. Ask and they will add a drop of cà cuống, the water-bug essence that survives only in old Hanoi shops — it is powerful, so say one drop.

Before you goThis is breakfast food — 7 to 9 in the morning is the best window. One plate is small by Thai standards, so order two or add giò lụa. They close after lunch and reopen in the evening, so between 2pm and 5pm you will find the shutters down.

Order the thigh, not the breast

In Hanoi phở is not only beef. Chicken phở is its own line, and this shop has been a reference point for it since 2009. The broth is simmered from chicken alone, clear with a thin film of fat on top, and you choose your cut — breast (lườn) is lean, thigh (đùi) comes with the skin and is far juicier. Order the thigh the first time. The dry version, phở trộn, costs the same and comes tossed with lime, peanuts and fried shallots, which goes down easier in hot weather. Open until midnight, it doubles as a late-night stop for Hanoians.

Before you goSay "đùi" for thigh, "lườn" for breast. It is a narrow shop down an alley and stays busy even late at night. Cash only. If you take the dry phở trộn, the lime and chilli come on the side so you can adjust it yourself.

Decide first: fried eel or poached

Miến lươn is a northern dish of freshwater eel and mung-bean glass noodles. This forty-year-old shop turns the same ingredients into three things: miến nước in broth, miến trộn tossed dry, and cháo lươn, an eel congee. The eel itself comes either fried crisp or poached soft. First time, take the dry miến trộn with fried eel — glass noodles, crisp eel, roasted peanuts, fried shallots and herbs give you a different texture in every bite, and the broth arrives in a small separate bowl to sip between mouthfuls. The soup version is clear and gentle, which is easier in the morning.

Before you go"trộn" means dry, "nước" means soup. Fried eel softens as it sits, so toss the bowl and eat it straight away. If small bones bother you, the fried eel is the safer choice over the poached. Mornings fill up with people working nearby.

Sticky rice instead of rice — Hanoi's breakfast and its midnight snack

Xôi is steamed sticky rice with toppings, and in Hanoi it counts as a full meal. The base here is xôi xéo: sticky rice stained yellow with turmeric, covered with mung-bean paste shaved into thin curls with a blade, then a shower of fried shallots. On top of that you choose — soy-braised pork belly (thịt kho), Vietnamese sausage (giò), pâté, a fried egg, Chinese sausage. Two of those is plenty. They stay open past midnight, which makes this where Hanoi comes when it gets hungry at night. For a first order, try xôi xéo with thịt kho and an egg.
