Three Michelin stars, one dish served for 150 years, and fritters over the lake

A special meal in Hanoi splits two ways. One is MICHELIN: three restaurants hold a star, and in the 2026 MICHELIN Guide Hanoi they are still the only three. The other is the house that has done one thing for over a hundred years. Both give you a reason that exists nowhere else.

The three starred rooms have nothing in common with each other. Gia serves a single seasonal tasting menu. Tầm Vị serves a hundred northern home dishes à la carte, at prices low enough that it is named among the cheapest Michelin stars anywhere. Hibana by Koki is a fourteen-seat teppanyaki counter with ingredients flown in from Japan.

The other three could not exist anywhere else: a house that has served nothing but chả cá since 1871, a restaurant selling shrimp fritters out on the West Lake causeway, and the vegetarian kitchen MICHELIN gave a Bib Gourmand. Three of the six need a booking — Gia and Hibana require one, Tầm Vị is safer with one. Mention allergies, vegetarian or no-pork when you book and the kitchen will adjust.

Modern Vietnamese fine dining. The name comes from gia đình, family — chefs Sam Tran and Long Tran named it for the home they were away from during years of working abroad. There is one tasting menu and nothing else, rebuilt from scratch each season. Familiar names like phở and bánh mì turn up inside the course, the flavours kept intact and only the form changed. Fourteen tables over two floors, on a lane opposite the Temple of Literature. The meal takes two to three hours; dinner Tuesday to Saturday, with lunch added on Friday and Saturday.

One of the cheapest Michelin stars in the world

A restaurant serving northern home cooking exactly as it is, holding a Michelin star for it. There is no tasting menu — a hundred-odd à la carte dishes meant to be shared, which is to say a Vietnamese family table transplanted: braised fish, fried tofu, a clear soup of gourd and shrimp, pork braised with eggs, cabbage rolls. Dishes run 100,000–200,000₫, and even the special ones stay under 300,000₫. Order four or five between you and it lands at around 200,000₫ a head. Two floors around a courtyard, a photo menu and English-speaking staff, so ordering is straightforward.

Fourteen seats at a counter, the chef cooking in front of you

A teppanyaki counter in the basement of Capella Hanoi. With only fourteen seats, it works as an invitation into one chef's kitchen. Chef Hiroshi Yamaguchi cooks the entire course on the steel plate in front of you, and the ingredients come in from Japan every two weeks — abalone, spiny lobster, sea urchin, Hokkaido hairy crab, with certified Kyori beef arriving monthly from Yaeyama. It is the only Japanese restaurant in Hanoi with a Michelin star, and there are two courses to choose from. Pick it when you need somewhere quiet, or when you want one night in Hanoi that is nothing like the others.

Since 1871, and still only one dish on the menu

In 1871 the Đoàn family began selling this dish at number 14 of what was then Hàng Sơn street. It became well enough known that the street itself was renamed Chả Cá street. There is still only one dish on the menu. You sit down, say how many you are, and out come the brazier and pan, a plate of dill, rice vermicelli, peanuts and the fermented shrimp sauce. The wooden stairs and the worn upstairs room are unchanged, and what tends to stay with people is having sat in that room rather than the food itself. Reviews do consistently say the portions are small for the price — go for a scene out of old Hanoi, not to fill up.

The upstairs wooden room is the picture here, so ask for it when you are seated. Several shops on the same street use the name "Lã Vọng" — check you are at number 14. If the fermented shrimp sauce is too much, they will swap it for fish sauce.

Shrimp fritters eaten on the causeway between two lakes

Bánh tôm is a Hanoi thing: shredded sweet potato through a batter with whole West Lake freshwater shrimp, shells on, deep-fried. This restaurant sits out over the water on the Thanh Niên causeway that divides West Lake from Trúc Bạch, so there is lake on either side of you. Eat it the moment it lands — the whole point is the shell staying crisp, and once it cools it is just fritter. Wrap a piece in lettuce and herbs and dip it in nước chấm. You eat the shrimp shell and all; that is the texture the dish is built on. For Hanoians this is closer to something you do on a weekend afternoon when you go out to look at the lake.

Before you goEat it within five minutes of it arriving — cold, the reason for the dish disappears. Don't peel the shrimp; whole is how it is meant to be eaten. Lakeside tables are limited, so go a little early on weekend afternoons, and bring a light layer for the evening breeze off the water (November to March).

The first vegetarian restaurant in Hanoi to appear in the MICHELIN Guide, and a 2026 Bib Gourmand. The room is built on northern Vietnamese house forms with Buddhist elements — a pond, a Buddha figure, wooden posts and exposed brick — and functions as somewhere to go quiet for an hour as much as somewhere to eat. The menu is Vietnamese vegetarian with Western and Thai influences: enoki salad, wild mushroom hotpot, fresh spring rolls, Huế-style vegetarian noodles, macadamia and pineapple fried rice. Nothing here uses meat, fish or fish sauce, so it fits straight into a Thai vegetarian-festival period or any vegetarian or vegan itinerary.
