Bún quậy and gỏi cá trích are not on mainland menus — you have to cross the water

Phu Quoc is 575 km², fifty kilometres from north to south and twenty-five across. It is easier to understand the food if you stop thinking of it as a destination you fly to and start thinking of it as land sitting in the middle of a fishing ground. When the boats come in each morning, that is what the broth will be.

Two products made the island's name: nước mắm, its fish sauce, and pepper. Phu Quoc fish sauce received EU Protected Designation of Origin status in 2012 — the first food from Southeast Asia to hold it. That sauce is the base seasoning of everything here, and the pepper gets mixed with salt and lime into the dip that goes beside every plate of seafood.

The six places below were chosen for one reason: you will struggle to find these dishes on a menu in another city. The noodle soup where you mix your own sauce, the herring cured in lime and tossed with coconut and rolled in rice paper, the coconut-curry breakfast noodles, and a fishing pier where you pick a live crab and they steam it in front of you. A local meal generally runs 50,000–90,000₫, about 60 to 110 baht (1 THB ≈ 790₫, Aug 2026).

Bún quậy began on Phu Quoc and never really left it. The rice noodles are extruded on the spot, and paste made from fish, prawn and squid is dropped straight into the broth to poach. But the dish is not really about the broth — it is about the sauce. Sit down and you get an empty dish with salt, sugar, chilli powder and calamansi (tắc). Put in salt and sugar, squeeze in the calamansi, then work it with your chopsticks until it thickens — the verb for that stirring, quậy, is where the name comes from. Start with half a spoon of salt, a spoon of sugar and half a calamansi, taste, then add chilli. The broth arrives underseasoned on purpose: that is the signal to dip.

Before you goNobody mixes the sauce for you — assembling it from the dish on the table is how this place works. Most people eat it for breakfast, but it stays open late and works as a night meal too. There is a branch of the same shop inside Grand World in the north if coming down to Dương Đông is awkward. No pork in this dish.

Gỏi cá trích is the first thing Phu Quoc locals put in front of a visitor. Herring is sliced thin and cured in lime juice and vinegar, then tossed with shredded onion, fresh coconut, roasted peanuts and herbs. There is a way to eat it: wet a sheet of rice paper (bánh tráng), lay leaves on it, add a chopstick-load of the salad, roll it, and dip into the ground peanut sauce. The lime handles the fish, the coconut brings the sweetness. This kitchen is equally good at crab and charcoal grilling, so a table of salad, steamed crab and grilled fish shares well. The price list runs wide — 13,000 to 250,000₫ — so ask what crab is going for before you order.

Crab noodles from five in the morning

Bánh canh is a thick, slippery noodle pulled from rice and tapioca flour — shorter than udon and far more slippery. On Phu Quoc it comes topped either with a whole blue swimmer crab (ghẹ) or with sliced fish cake (chả cá). The broth is simmered from crab shell and fish bone, clear and faintly sweet, finished with fried shallots and spring onion. This place opens at five, shuts at eleven, and opens again at one — a timetable built around people out doing the morning shopping. The crab version means picking meat out of the shell with your hands. If you are short on time, the fish cake is faster.

Coconut curry broth — usually gone by ten

Bún kèn is a breakfast noodle you mostly find on Phu Quoc and in Hà Tiên, the port across the water. White fish is poached, picked off the bone and fried with turmeric and lemongrass, then coconut milk goes in to make a thick sauce — closer to a dressing than a soup. Over that come raw leaves, shredded green papaya, roasted peanuts and fried shallots, and you squeeze lime and toss it all together. Thai visitors will recognise the register: it sits somewhere between a curry and Thai nam ya. A bowl is 20,000–25,000₫, about 25–30 baht. They make a set amount each day, and it is often gone by half past nine.

Before you goGo before eight — it often sells out by half past nine. The sign is small and the shop is stall-sized, so walk 30/4 street checking house numbers rather than looking for a facade. Because of the coconut milk the sauce is heavy; squeeze half a lime and toss once before you start and it lightens right up. No pork.

Sea urchin and shellfish over charcoal

There is only one way Phu Quoc eats sea urchin (nhum): split it in half, spoon in scallion oil and crushed peanuts, set it over charcoal, and when the edges bubble, squeeze lime and eat it out of the shell with a spoon. It tastes straightforwardly of the sea and is barely seasoned. A sign reading ốc means a shellfish grill house, and urchin usually sits as one line on that menu. The other lines are worth your time too — sea snails cooked in coconut milk (ốc len xào dừa) are fun to suck from the shell, and grilled scallops and squid never miss. Urchin is seasonal. If they say no, move to the shellfish.

The island's northwest corner, with its feet in the sand

Gành Dầu is the fishing commune at the island's northwest tip. It is a long drive up from Dương Đông, but the sea toward Cambodia opens out in front of you and the density of visitors drops away. This place sits right on that beach, so you eat with the surf in earshot. The menu is whatever the boats brought in, and the one not to miss is cá kho tộ — fish braised in a clay pot with fish sauce and caramelised sugar, one of the anchors of Vietnamese home cooking. It is salty, sweet and deep, and it needs plain rice beside it. Pair it with the evening of a day spent up north at Grand World or VinWonders and the route makes sense.

Tie it to a northern day (Grand World, VinWonders), and note that this road is dark after sunset.
