A coconut coffee, a bowl of chè full of ice — how the afternoon gets through

Phu Quoc afternoons are hot. Between noon and three there is very little you can usefully do outdoors, and the way people here get through that stretch is something with ice in it.

Coffee first. Vietnamese coffee is robusta, brewed strong and cut with condensed milk — cà phê sữa đá is the base form. Two variations are everywhere. Cà phê cốt dừa, with frozen coconut milk blended over the top, is closer to a dessert than a coffee; cà phê muối, which started in Huế and spread nationwide, adds a salted cream cap that pulls the sweetness back. A glass runs 40,000–110,000₫.

For sweet things, the centre of gravity is chè — beans, jellies, fruit and coconut milk under ice, in dozens of versions, much the way nam khaeng sai does at home. Add rolled ice cream, fresh fruit smoothies, and one thing you will find only here — pepper chocolate — and the afternoon is accounted for.

Chè is not one dish but a whole family — cooked beans, jellies, fruit, tapioca and coconut milk combined over ice in a glass or a bowl. This shop opens at five in the evening and closes at ten. If the menu is hard to read, remember three. Chè Thái, with jackfruit, jelly and coconut cream, is the one Thai visitors know best — the name says as much. Chè bưởi uses the white pith of pomelo for texture and is hard to find outside this country. Sâm bổ lượng is the herbal one, with jujube, lotus seed and seaweed, and is much less sweet. A bowl is 10,000–30,000₫, about 12 to 38 baht.

Before you goEvenings only — go in the daytime and you will find it shut. It is walkable from the night market on Võ Thị Sáu, so seafood at the market and dessert here is the natural order. There is ice in everything, so go easy if your stomach is sensitive. The components sit in tubs in the display case, so pointing works when you don't know the name. Bring cash.

Scraped off a frozen plate and rolled in front of you

A rolled ice cream stall on Võ Thị Sáu, the night market street. The making is the show: base is poured onto a plate chilled below freezing, fruit — mango, passionfruit, durian — is chopped into it with two spatulas, spread thin, left to set, then the sheet is scraped up into rolls and stood in a cup. Three or four minutes, and you watch the whole thing. Children love it. The tropical fruits come through best, so start with mango or passionfruit; durian is strong. A cup is 30,000–50,000₫, which is the right size after a market plate of seafood.

Before you goThe market opens at six but this stall opens in the daytime — and closes at nine, so a late start at the market means missing it. It takes three or four minutes to make, so decide your flavours in advance if there are several of you. Several similar stalls share the street; go where people are standing. Cash only.

A cafe and bar on Sao Mai hill (Đồi Sao Mai) behind Dương Đông town. It runs from half seven in the morning to half ten at night, so any hour works, but it is a cafe by day and a bar by evening. From the open terrace you see the town laid out and the sea beyond it. The drink to order is coconut coffee (cà phê dừa) — frozen coconut milk blended and poured over strong coffee, around 110,000₫. The first sip is coffee; stir it and it becomes a coffee shake. There is no air conditioning, only fans, so mornings and late afternoons are more comfortable than the middle of the day.

Before you goWe could not confirm the street number — tell your Grab driver "Đồi Sao Mai" and most of them know it. It is five to ten minutes by car from town and there is no pavement, so walking up is not realistic. With no air conditioning, avoid noon to three, and if you are after the sunset, take a west-facing seat an hour before. The coffee is strong; late in the afternoon it may cost you some sleep.

Above Ông Lang, and past the glass rail there is only sea

A cafe on the hillside above Ông Lang beach in the island's northwest. Wooden decks step down the slope and the balustrades are glass, so once you sit there is nothing in your view but sea — that structure is why the place became known through photographs. Drinks are Vietnamese coffee and fresh juices with a short brunch menu. A latte is 90,000₫ and juices start at 100,000₫, roughly double a town cafe; take the difference as paying for the seat and the time. Two people with drinks and something small runs 250,000–300,000₫. Midday light brings the water colour out; dusk is the prettiest.

You cannot walk here (no pavement) — you need Grab or a bike, 150,000–250,000₫ one way, twenty to thirty minutes from town. We could not confirm opening hours, so work on ten to five. There are a lot of mosquitoes around dusk; bring repellent.

The island's first chocolate workshop. It also supplies chocolate to Accor-group hotels here, so it is not purely a visitor activity. The point of what you make is the topping: put this island's pepper on top of the bitterness of cacao and it leaves a warm sting at the end. Do it on the day you have seen a pepper garden and you understand where the taste came from. Two options: the 75-minute course gives you a hot or iced chocolate and twenty pieces you make yourself; the 90-minute course adds a tasting of three cacao liqueurs. You take what you made away boxed — and unlike the fish sauce, it is a gift you can carry in the cabin.
