Nha Trang food is explained by the sea and fish cake. Boats go out off Khánh Hòa all year, and the fish landed in the morning is ground and shaped into cake the same day, then laid over noodles. That is bún chả cá. In summer it gains a cousin, bún sứa, with blanched jellyfish in it — a clean crunch that somehow leaves the broth clearer than before.

The other axis is Ninh Hòa, 30 km north of the city. The grilled pork rolls Thailand knows as nem nueang come from there, and the Khánh Hòa way serves them with neither noodles nor rice — meat and herbs rolled in damp rice paper, dipped in a thick yellow sauce ground from pork and sticky rice. Same name you know, different build. Worth comparing.

Minced pork mixed with garlic, shallot, fish sauce and pepper, pressed into shape and grilled over coals — that is nem nướng, and its home is Ninh Hòa, north of Nha Trang. It arrives differently from the version served in Thailand: no noodles, no rice, just a damp sheet of rice paper, lettuce and mint, slices of green banana, star fruit and cucumber, and crisp fried rice-paper sticks. You roll it yourself and dip. The sauce is ground pork and sticky rice cooked down until thick and yellow. It is ordered per person, so two of you means two portions. Be generous with the herbs — pork alone gets heavy fast.

Noodles under fish cake are bún chả cá; add blanched jellyfish and it becomes bún sứa. The jellyfish is caught off Khánh Hòa, cured in brine and blanched, and it contributes no flavour at all — only a clean crunch. The broth is simmered from fish bones alone and comes out startlingly clear, and two kinds of fish cake go in, one fried and one steamed. First time, order the bowl that has both fish cake and jellyfish. The pot of fermented shrimp paste (mắm ruốc) on the table is powerful — half a spoon at most, or it clouds the broth. Lime and chilli, on the other hand, you can be generous with.

Seven in the morning, just join the line the neighbourhood is standing in

An old bún chả cá shop on Ngô Gia Tự. It rarely turns up in guidebooks, and instead fills every morning with people working nearby and traders from the market. The broth is simmered from mackerel bones landed that morning and the fish cake is shaped the same day. Here you do not choose a cut, you choose toppings: fried fish cake (chả chiên), steamed fish cake (chả hấp), chunks of poached fish (cá dầm), jellyfish (sứa). If in doubt, say "đầy đủ" and they put everything in. Squeeze half a lime over it, and add the bean sprouts and banana blossom a little at a time so the broth stays hot.

Bánh căn belongs to the south-central provinces, Khánh Hòa and Lâm Đồng. Unlike bánh khọt it is not fried in oil — the batter is baked in a clay griddle pierced with round wells and set over charcoal, which is why it comes out crisp without being greasy. Plain batter is the base; quail egg, hen egg, prawn or squid go on top, and a griddle holds ten. The Nha Trang version comes with two sauces: a thin garlic-and-chilli fish sauce, and a thicker one loosened with spring-onion oil and small pork balls. Take both and alternate. Do not leave the green mango and pickled cucumber — they cut the richness.

A bánh mì shop on Bạch Đằng. The basics are the same everywhere in Vietnam, but Nha Trang also sells it filled with chả cá, the local fish cake — a combination you rarely find in other cities. The baguette goes back over heat once it is ordered so the crust comes alive. Inside: pâté, cucumber, coriander, pickled carrot and daikon, whatever filling you chose, then chilli sauce and soy at the end. If coriander is not for you say "không rau mùi"; for no heat, "không ớt". People buy these on the way to work, so the queue moves fast even when it looks long.
