Nha Trang sets a table in two layers. The lower layer is the fishing village: boats come into the Vĩnh Lương harbour north of the city every day, and there you choose what you eat out of a tank and have it weighed. You are not reading a menu, you are looking at something alive and pointing — strange the first time, good fun once you have done it.

The upper layer is the last twenty years. Through the 2010s, charter flights from Russia poured into Cam Ranh airport and Cyrillic signs went up all over town. The crowds have thinned, but the kitchens that opened then are still turning out soup, dumplings and Georgian bread. That is not food you get many chances at in Thailand, so it amounts to spending one day of a Vietnam trip at another country's table.

A Vietnamese restaurant in the traveller lanes off Nguyễn Thiện Thuật that also runs a cooking class. The usual shape is a morning walk through a market to pick ingredients, then back to the kitchen to cook a few dishes and eat what you made for lunch. What you cook changes from session to session, but spring rolls, a noodle dish and something local to Nha Trang come up often. Coming only to eat is fine too — the menu is written clearly in English and they will ask about heat and coriander, which makes it an easy place to bring someone new to Vietnamese food. The class has fixed numbers and times, so ask ahead and hold a place.

Beside the harbour where the boats come in, picked live from the tank

Twenty-odd minutes north of the centre, the Phạm Văn Đồng coast road brings you to the Vĩnh Lương fishing harbour, and this seafood house sits beside it. The drive is half the point — mountains on your left, sea on your right, with pull-ins that look down over the bay. Ordering starts at the tanks, not the menu: point at prawns, crab, shellfish or fish, they weigh it, and you choose the treatment. Steamed (hấp), charcoal-grilled (nướng), stir-fried with garlic (xào tỏi) or in tamarind sauce (sốt me) is all the vocabulary you need. The price is set by that day's market, so confirming the per-kilo rate before you point is the one rule of this system.

Before you goEverything is priced by weight, so confirm the per-kilo rate and the rough weight before you choose. Almost every bill dispute starts there. It is about twenty minutes by Grab from town, but cars can be scarce coming back at certain hours — ask your driver to wait or book the return in the app. The coast road is dark after sunset, so a motorbike is not the way to do this one. No pork is used, though the sauces contain fermented fish.

A Russian home-cooking place down a lane off Nguyễn Thiện Thuật. Through the 2010s, charter flights from Russia came into Cam Ranh airport in numbers and Cyrillic signs went up right across town; the crowds have thinned since, but the kitchens that opened then are still here, and this is one. Expect deep red beetroot soup, borscht, boiled dumplings called pelmeni, potatoes under sour cream and jars of pickled vegetables. It is a combination you rarely get the chance to eat in Thailand, so it makes a good day off from Vietnamese food. Nothing is heavily spiced, which also helps when a run of chilli has caught up with you.

Before you goClosed Monday and Sunday, and it opens at midday — turn up before lunch and you will find it shut. Many of the dumplings and sausages contain pork, so check before ordering if you avoid it; there are chicken and beef dishes on the menu. The menu may be Russian-first, so ask for the pages with pictures or keep a translation app open. It is down a lane, so check the house number.

Georgian bread and a Russian breakfast, in a Vietnamese city

A Russian and Georgian kitchen on Nguyễn Thị Minh Khai. Okroshka, the dish it is named for, is a cold soup — cucumber, potato and herbs diced fine, then flooded with kvass or kefir and served chilled. It makes more sense in a hot country than it sounds, and it suits a Nha Trang afternoon. On the Georgian side the headline is khachapuri, a boat of bread baked around molten cheese, usually finished with an egg yolk in the middle; tear pieces off the rim and dip them while it is still hot. There is a breakfast menu, cakes and coffee too, which makes it work as a brunch stop. They close between 2 and 3.30 in the afternoon, so plan around it.

A charcoal seafood buffet on Trần Phú. Where the harbour place sells by weight at market rate, this one is a fixed price per head — the difference is that you know the budget before you walk in. You fill a tray with prawns, shellfish, squid, meat and vegetables and cook it on the grate set into your table, with a saucer of salt, pepper and lime and a chilli sauce alongside. There is only an order to respect: shellfish on first so the juices come out, prawns in their shells, squid last and briefly. It opens at five and closes at ten, which fits a single evening neatly. Seating is outdoors with smoke and heat, so dress light.
