Snails go on the coals at sunset, and noodles are still being sold past midnight

Nha Trang's night happens one block back from the sea. Trần Phú itself belongs to the hotels and resorts; the actual night trade opens behind it, in the lanes off Nguyễn Thiện Thuật and Nguyễn Thị Minh Khai. Shutters that were down all day go up around four in the afternoon and low plastic stools appear on the pavement.

What the night is really about is ốc — sea snails and shellfish. Khánh Hòa is a major producer of one in particular, ốc hương, grilled over charcoal with salt and chilli or tossed in garlic butter. It arrives plate by small plate, which is the point: order several kinds, drink beer over ice, and stay a long time. That is how this city uses an evening.

The six below are arranged by when they open and when they close — the four o'clock places, the noodle shop still serving at one in the morning, and the door that never shuts. Nights are almost all cash, and the street seats are dimly lit, so keep your bag on your lap.

The night market sets up one block in from Trần Phú beach. Half of it is souvenirs and clothing; the other half is food. Read as a meal, it has an order to it: pick up a bánh tráng nướng and a skewer near the entrance and eat them walking, then find one of the stalls with seating further in and order grilled squid or shellfish. Plenty of stalls sell cut tropical fruit — choose the one that cuts it in front of you rather than the trays already peeled and sitting out. Many stalls display no prices, so ask before they start filling a bag, and confirm the total if you are taking several things.

Quán Ốc Ngon

The shutter goes up at four and the lane fills with grilling snails

"Ốc" covers sea snails, whelks and shellfish generally, and in Vietnam it is a whole genre of evening trade. This place opens at four and runs to ten, which is the entire evening. You order by species times method: the local baseline is ốc hương, a snail Khánh Hòa produces in quantity, grilled over charcoal with salt and chilli (nướng muối ớt). After that come garlic butter (xào bơ tỏi), coconut milk (xào dừa) and lemongrass steaming (hấp sả). Plates are small, so three or four kinds shared is the correct way to do it. A toothpick comes with every plate; dip the meat in the saucer of lime, salt and pepper.

Before you goPlates are small, so order three or four kinds to share. If an item has no price beside it, it may be market-rate — ask before ordering. No pork is used, but the stir-fry sauces contain fermented fish, and shellfish is obviously out if you have an allergy. Ốc hương has a hard shell: push the toothpick in and turn it clockwise and the meat comes out whole.

An evening seafood house on Nguyễn Thị Minh Khai. The name, biển đêm, simply means night sea. It sits a block off the tourist restaurant strip, which keeps prices gentler than the beachfront and the room full of locals. Four in the afternoon to ten at night makes it a straightforward dinner. The cooking is plain: fish fried (chiên) or steamed (hấp), prawns over charcoal, clams steamed with lemongrass. Beer here is drunk over ice, so take one large bottle and a cup of ice each and share it. The menu has photographs, so you can order by pointing.

Thirty seconds for a sheet of rice paper to go crisp over charcoal

A sheet of rice paper goes onto a charcoal grate, an egg is cracked over it and spread thin, then dried shrimp, chopped spring onion, mayonnaise and chilli sauce go on top. About thirty seconds later the edges start to curl and it is folded in half and handed over, to be eaten standing, with your hands. It occupies roughly the same place as khanom bueang in Thailand, but it is saltier and sharper. The basic build is quail egg and dried shrimp; sausage, cheese and beef jerky can be added. It is cheap enough that ordering several is easy, but one sheet is more filling than it looks — start with two between you. This is the right first course for a walk through the night lanes.

Before you goIt goes soft a minute or two after grilling, so eat it as soon as it is handed over. Sausage and jerky bring pork into it — if you avoid pork, stop at quail egg, dried shrimp and cheese. All the chilli sauce and mayonnaise together is quite salty; say "ít sốt" for less sauce. There is almost nowhere to sit, so this is a standing or takeaway stop.

Mì quảng is a yellow rice noodle served with barely any broth — the noodles are not submerged, there is just a thick, concentrated pool at the bottom of the bowl. Which means you have to lift and toss it from the bottom before you eat, or the seasoning stays where it landed. Prawn, meat and a boiled quail egg go on top, and a sesame rice cracker (bánh tráng mè) comes alongside to be broken up by hand into the bowl along with the peanuts. The reason it is on this list is that it stays open until one in the morning. Arriving late, or leaving the night market late, it is hard to find an open noodle shop — this one covers that hour. Before you goThe standard build (tôm thịt) contains pork — order the chicken version (gà) to avoid it. The near-dry bowl looks like a mistake the first time; it is not, just toss it up from the bottom. The rice cracker is meant to be broken into the bowl by hand and goes soft if you leave it. A beef specialist up in Vĩnh Hải, north of the centre. Its reason for being on this list is simple: it is open around the clock. If a late flight into Cam Ranh puts you in town at three in the morning, or a long night needs something hot before sunrise, this is one of the few doors that will be open. The core is fresh beef sliced thin and dipped briefly into hot broth (nhúng) or grilled over charcoal, with noodles or rice to turn it into a meal. In the small hours the kitchen runs light and the menu can shrink, so call ahead or set expectations at the simple dishes. It is away from the beach, so take a Grab.
