Coffee and something cold

The coffee is strong, the ice is plentiful, and two in the afternoon is spent indoors

Vietnamese coffee is robusta — more bitter and far stronger than arabica, which is why the country settled on drinking it under condensed milk and ice rather than straight. That is cà phê sữa đá. Blend coconut milk over the top and you get cà phê cốt dừa, which is closer to a dessert and needs stirring from the bottom before the ice melts.

Beyond coffee there are three things worth knowing: sinh tố, fresh fruit blended to a shake; chè, beans, jelly and coconut milk layered in a glass; and kem bơ, avocado blended and topped with ice cream. All three cost 20,000–40,000₫ from a street stall, and all three beat coffee for getting through the heat of the day.

In Nha Trang a cafe is also shelter between noon and three. There is almost no shade on the beach in those hours and the sun is severe, so building the day around going indoors then and back out when the light drops will leave you far less worn down. A cafe chain with branches across Vietnam; the Nha Trang one sits on Nguyễn Thiện Thuật in the traveller quarter. The look is the same everywhere — old wooden furniture, enamel cups, green-painted walls, an idea of a Vietnamese state shop from decades ago. The drink to order is cà phê cốt dừa, coconut milk blended to a slush and poured over strong coffee. The top is sweet and cold and the bottom is bitter, so push the straw to the base and stir the layers together or the last mouthful will punish you. If Vietnamese coffee is new to you, start here, and if it agrees with you, try a roadside cà phê sữa đá the next day. It costs two or three times a street stall, but you get air conditioning, a toilet and an English menu with it.

Before you goThe two layers are different drinks until you mix them, and the last mouthful is very bitter if you do not — push the straw to the base and stir. Vietnamese coffee is strong; drink it in the evening and you will not sleep. It is served over ice, so say "ít đá" for less ice if your stomach is sensitive. The upstairs window seats look down over the lane, and there are power sockets if you need a break.

A rooftop open 24 hours — watch the sun come up over a coffee

A rooftop cafe on Nguyễn Thị Minh Khai that stays open around the clock. Nha Trang's beach faces east, so the sun comes up straight in front of it — and very few places are open at that hour. Go up around half past five, put a coffee in front of you and watch the sky change, and you have effectively got a sightseeing stop for the price of a drink. During the day ask for a shaded table; at night the city lights do the work. There is bubble tea and fresh juice as well if you want to skip the caffeine. It is not as polished as the beachfront rooftop bars, but it charges local prices and it is always open, which is the point.

Before you goIt is a rooftop, so shaded tables go first and the middle of the day is genuinely hot — this is an early-morning or night spot. For sunrise, being up there before about half past five works in most seasons. Even at 24 hours, there is only one member of staff overnight and orders take longer. Bring cash.

A morning-only bakery — the door shuts at half past three

A small bakery cafe down a lane off Nguyễn Thiện Thuật. It opens at eight and closes at half past three, and not at all on Mondays — which is why so many reviews are about turning up in the evening and finding it shut. Treat it as breakfast. Bagels, sandwiches, bread baked on site and coffee are the core, and it is a good alternative on the morning when a run of Vietnamese food has you wanting something familiar. Nha Trang inherited a French baguette culture and bread is generally good here; this place layers American bagels and brunch on top of that. It is small, with only a few seats, and the popular items go before noon.

Two blocks from the sand, where the midday heat gets switched off

An ice cream shop and cafe on Biệt Thự, two blocks in from the beach and easy to catch on the way back from a swim. Midday in Nha Trang is hard to sit through without shade, and knowing one place like this makes the afternoon easier to plan. Take the tropical flavours and you get combinations this city actually grows — mango, passionfruit, coconut, and soursop (mãng cầu), which is uncommon even in Thailand and whose sharp sweetness works well in heat. Coffee and drinks are on the same counter, so a group can order in different directions, and there are seats if you want to stop rather than walk on.

Before you goAt midday it will melt before you have walked anywhere, so sit down to eat it. The tropical flavours turn over fast and taste fresh; if dairy does not agree with you, ask whether there is a sorbet. It is two blocks from the beach and walkable, but the air conditioning can feel cold if you come straight off the sand still wet — a light layer helps.

Down a lane, quiet, and closed by five

A cafe tucked into a lane in Vĩnh Nguyên, at the southern end of the city. You cannot see it from the main road, which keeps the tourist density low and the room quiet. It opens at seven and closes at five, and not at all on Mondays. Brunch, coffee and bakes are the core. The reason it earns a place on this list is where it is: the south of Nha Trang is where the big resorts and the Vinpearl cable car station sit, so if you are staying down there or have a day out that way, you can eat breakfast without going into town first. The lane is narrow and a Grab car may not reach the door, so allow for a short walk in from the main road.
